Marlin Kaplan's new fall dinner menu at One Walnut presents a lot of fun and a lot of yum. Short courses include pumpkin flan with frisÃ©e and pumpkin-seed vinaigrette, frog-leg pÃ¢tÃ© with micro celery and mustard vinaigrette and shrimp cocktail with a Bloody Mary Jell-O shot. From the sea, he offers a red snapper pot-au-feu, while meat and fowl entrees include duck cassoulet, chorizo-crusted pork tenderloin and a grilled lamb medley with falafel, feta and minted cucumber dressing. In what seems like an upscale culinary version of reality TV's "Trading Spaces," Michael Herr has just arrived as the new chef at the Ritz-Carlton, Cleveland's Century restaurant, while former Century chef Frank Belosic now runs the kitchen at Fahrenheit in Herr's former digs at the Ritz-Carlton, Georgetown in Washington, D.C.
The new Business Center at 1220 Huron Road downtown, in addition to meeting rooms, videoconferencing and Internet access, will offer customers the Vinea wine bar, catering and a 38-seat coffee bar with light breakfast and lunch menus.

Executive chef Morgen Jacobson, who departed Lockkeepers for a West Coast gig, has been replaced by Michael (Mojo) Herschman. Paul DeMelto has taken the culinary reins at Bossa Nova at Eton in Woodmere, which Herschman left only weeks after the tapas bar/ lounge's mid-May opening.

Richard Maitland is the new chef at Corleone's Ristorante and Bar in Parma. His rÃ©sumÃ© includes stints at Johnny's Bar on Fulton, Traci's Restaurant, Bucci's and even the long-gone Garland in Westlake. Maitland, who says his best work is done from scratch, promises to expand the Italian eatery's menu with a selection of new entrees, including grouper dumplings, a game dish and several variations on an exotic-fish theme.
Chris Feuerborn, formerly of Ristorante Giovanni's and the late Mad 4 You, has resurfaced as the executive chef at the Inn at Roscoe Village.
