It wouldn't be summer without roasting marshmallows over an open flame. But if you aren't one to head into the wilderness to satisfy your sweet tooth, Blue Canyon Kitchen and Tavern chef and and co-owner Brandt Evans has done all the hard work for you. His BC Smores dessert ($6.50 regular, $3 mini size) is an elegant approach to the campfire staple with a chocolate-peanut ganache on a graham cracker crust. The crowning glory is a homemade marshmallow that Evans and his team whip up using egg whites and melted sugar before torching it. "I wanted a dessert that truly represented the log cabin comfort feel," Evans says. "I can remember roasting marshmallows with my family when I was young.
