Mushroom Pie Filling

Makes enough filling for one double crust pie


1 tablespoon extra virgin olive oil

1 large onion, diced

1 pound fresh mushrooms, single variety or a mix, thinly sliced

3/4 cup heavy cream

6 slices bacon, cooked, drained and crumbled

1 cup shredded Swiss cheese

1 teaspoon chopped fresh dill

Salt and freshly ground black pepper, to taste


Preheat the oven to 400 degrees F.


Heat the oil in a large skillet over medium-high heat. Add the onion and mushrooms and sauté until soft and tender, about 5 minutes. Reduce the heat to medium and add the cream, stirring for 10 more minutes until slightly thickened. Remove from the heat and stir in the bacon, cheese and dill. Set aside to cool slightly before filling the crust. Roll out and prepare the crust as directed above.


Bake for 30 to 35 minutes
