The Cystic Fibrosis Foundation
More than 250 guests indulged in creations by local chefs at the ninth annual Chef’s Fantasy at The Ritz-Carlton. Loretta Paganini and students from the International Culinary Arts & Science Institute provided a variety of dishes such as chilled asparagus soup shooters, wild mushroom risotto and steamed Chinese dumplings for the VIP reception. Guests bid on silent auction packages such as jewelry from Alson, a Napa Valley trip and Cavaliers tickets. The event also featured a six-course dinner prepared by local chefs such as Muse’s Chad Ellis, The Flying Fig’s Karen Small, One Walnut’s Marlin Kaplan and Momocho’s Eric Williams. Guests dined on veal and chard polenta sformato, braised pork shoulder, roasted rack of lamb with house-seasoned lamb sausage, and scallop and lobster terrine. Each course was paired with wine from Cline Cellars. The event raised about $150,000 for the Cystic Fibrosis Foundation.
