While co-owner Ryan Howard grew up on Bialy’s Bagels in University Heights, he was always frustrated by the shop’s lack of bagel sandwiches. “All you needed was a little bacon, egg and cheese and you’d have a killer sandwich,” he says. Once he got his bagel food truck rolling, Howard thought he’d use Bialy’s to finally make those breakfast sandwiches. But he began gravitating toward Cleveland Bagel Co.’s soft-on-the inside, crispy-on-the-outside varieties for The Spread’s made-to-order sandwiches such as a turkey club ($8) or corned beef and egg ($8).
