Second-generation immigrant Tommy Karakostas doesn't get to visit Greece as often as he'd like. So the chef and owner of Santorini Greek Taverna makes sure his favorite Old World dishes such the Horiatiki salad ($13) find new life at his Warehouse District spot. "This is the most traditional salad in Greece," he says. "You can just be out on the farms, assemble these basic ingredients and build yourself a salad." A bed of vine-ripened tomatoes make up the plate's bottom. Then a layer of Persian cucumbers is stacked with red onions and green peppers. Topping off the tower is a wedge of imported Greek feta, Kalamata olives, capers and an olive oil and red wine vinegar dressing.
