Whether you want to brine your own brisket or grab one that’s ready to cook, here are some places to stock up on corned beef.

The Butcher’s Pantry 

This place is a whole-animal butcher, so they start with the cow and can trim you a brisket exactly to order. J&J Czuchraj Meats

Jaworski Meats 
Jaworski Meats offers vacuum-packed corned beef as well as whole brisket and flats ranging from three to 18 pounds. An assortment of pickling spices are also available. “Once your brine is made, put a raw egg [still in the shell] in,” says owner Mark Jaworski. “If it sinks, there’s not enough salt in the brine.
